The lighting is intimate, the ventilation is top-notch (so you don't smell like smoke), and the service is incredibly polite. It’s a far cry from the rustic, bustling counters I often frequent, but it has its own distinct charm. It feels like a place for a celebration or a special treat.
The Broth: A Deep, Rich Beef Bone Revelation
I ordered the Wagyu Kokoro Spicy Ramen. While I waited, I could smell the incredible aroma of grilled meats from other tables, which only made me hungrier. When the bowl arrived, it looked luxurious.
The broth was a deep, rich brown and had a beautiful sheen. This wasn't a light chintan or a creamy paitan; this was a full-bodied beef bone broth. It was, without a doubt, one of the most luxurious bowls of ramen I’ve ever had.
